Ingredients
- 500g American oyster mushrooms, cleaned and sliced
- 2 tbsp coconut oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2 green chilies, slit lengthwise
- 1 sprig curry leaves
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tbsp curry powder (Sri Lankan or roasted)
- 1 tsp chili powder (adjust to taste)
- 1/2 tsp fenugreek seeds
- 1 tomato, chopped
- 200ml coconut milk
- 1/2 cup water
- Salt to taste
- Juice of 1/2 lime
- Fresh coriander leaves for garnish
Instructions
- Prepare the Mushrooms:
- Clean the oyster mushrooms by wiping them with a damp cloth or gently brushing off any dirt. Slice them into manageable pieces.
- Temper the Spices:
- Heat the coconut oil in a large pan over medium heat.
- Add mustard seeds, cumin seeds, and fenugreek seeds. Allow them to sizzle for a few seconds until they release their aroma.
- Add the chopped onion, garlic, ginger, green chilies, and curry leaves. Sauté until the onions become soft and golden brown.
- Spice the Curry:
- Add turmeric powder, curry powder, and chili powder to the pan. Stir and cook for about 1-2 minutes to let the spices release their flavors.
- Add the chopped tomato and cook until it softens and blends with the spices, forming a thick paste.
- Cook the Mushrooms:
- Add the sliced oyster mushrooms to the pan, stirring to coat them well with the spice mixture.
- Pour in the coconut milk and water, then bring the curry to a simmer. Lower the heat and cook for about 10-12 minutes, allowing the mushrooms to absorb the flavors and the sauce to thicken.
- Finish the Dish:
- Season with salt to taste and squeeze in the lime juice. Stir well and adjust the seasoning if needed.
- Garnish with fresh coriander leaves.
