Ingredients

  • 500g American oyster mushrooms, cleaned and sliced
  • 2 tbsp coconut oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 green chilies, slit lengthwise
  • 1 sprig curry leaves
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tbsp curry powder (Sri Lankan or roasted)
  • 1 tsp chili powder (adjust to taste)
  • 1/2 tsp fenugreek seeds
  • 1 tomato, chopped
  • 200ml coconut milk
  • 1/2 cup water
  • Salt to taste
  • Juice of 1/2 lime
  • Fresh coriander leaves for garnish

Instructions

  1. Prepare the Mushrooms:
    • Clean the oyster mushrooms by wiping them with a damp cloth or gently brushing off any dirt. Slice them into manageable pieces.
  2. Temper the Spices:
    • Heat the coconut oil in a large pan over medium heat.
    • Add mustard seeds, cumin seeds, and fenugreek seeds. Allow them to sizzle for a few seconds until they release their aroma.
    • Add the chopped onion, garlic, ginger, green chilies, and curry leaves. Sauté until the onions become soft and golden brown.
  3. Spice the Curry:
    • Add turmeric powder, curry powder, and chili powder to the pan. Stir and cook for about 1-2 minutes to let the spices release their flavors.
    • Add the chopped tomato and cook until it softens and blends with the spices, forming a thick paste.
  4. Cook the Mushrooms:
    • Add the sliced oyster mushrooms to the pan, stirring to coat them well with the spice mixture.
    • Pour in the coconut milk and water, then bring the curry to a simmer. Lower the heat and cook for about 10-12 minutes, allowing the mushrooms to absorb the flavors and the sauce to thicken.
  5. Finish the Dish:
    • Season with salt to taste and squeeze in the lime juice. Stir well and adjust the seasoning if needed.
    • Garnish with fresh coriander leaves.

  • Serve the curry hot with steamed rice, roti, or string hoppers.
  • Accompany with other Sri Lankan dishes like dhal curry or coconut sambol.
