Pan-Seared Lion’s Mane Mushrooms with Garlic and Thyme

Ingredients:

  • 250g Lion’s Mane mushrooms, cleaned and sliced into 1/2-inch thick pieces
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
  • Salt and pepper to taste
  • Juice of 1/2 lemon
  • Fresh parsley for garnish

Instructions:

  1. Prepare the Mushrooms:
    • Gently clean the Lion’s Mane mushrooms by brushing off any dirt or debris. Avoid washing them with water to prevent them from becoming soggy.
    • Slice the mushrooms into 1/2-inch thick pieces.
  2. Sauté the Mushrooms:
    • Heat the olive oil or butter in a large skillet over medium heat.
    • Add the sliced mushrooms to the skillet in a single layer. Cook without moving them for about 3-4 minutes until they develop a golden brown crust on one side.
    • Flip the mushrooms and cook the other side for another 3-4 minutes.
  3. Add Garlic and Thyme:
    • Once the mushrooms are nicely browned, add the minced garlic and thyme to the skillet.
    • Sauté for an additional 2-3 minutes, stirring frequently, until the garlic is fragrant and the mushrooms are fully cooked.
  4. Finish with Lemon:
    • Squeeze the juice of half a lemon over the mushrooms and stir to combine. Season with salt and pepper to taste.
  5. Serve:
    • Garnish with fresh parsley and serve immediately.
